Lemon Strawberry Breakfast Crepes

Oh, hi guys! Sorry I’ve been a little off the map lately, but you’ll have to understand that not only am I drowning in research for final papers, but that the weather has been amazing recently and the last place I want to be is in a hot kitchen or burning my eye balls out in front of a computer all day.

However, I’ve been baking away as usual and have an awesome impromptu breakfast to share with you!  And it’s perfect for a Mother’s Day brunch this weekend…  Lemon crepes with fresh strawberries and vanilla yogurt.

I really love crepes, or “really, really thin pancakes,” in the words of Ricky Bobby.

No, really!  I like them for breakfast… sweet or savory, and especially for dessert. We’ll have to do crepe suzette another day.

Anyway!

Go Buy This Stuff

makes about 6 crepes

1 cup flour

2 eggs

1/2 cup milk

1/2 cup water

1 lemon

pinch of salt

2 Tbsp butter, melted and cooled

2 cups strawberries, diced and tossed with 1 Tbsp of sugar

2 cups vanilla yogurt

In a medium bowl whisk together flour and eggs.  It will get super sticky.

Add milk.

Add water.

Zest your lemon, and add it in.

Whisk in butter and salt.

Lightly grease a small frying pan and heat it over medium heat.  Pour about 1/4 cup of batter onto the hot pan and swirl it around until the bottom of the pan is evenly coated.

Once the edges start to pull away from the pan and the top of the crepe becomes dry, flip that baby over.

Cook the other side for another couple of minutes until golden and set on a warm plate.  Repeat until all crepes are finished.  Set up an assembly line with your crepes, berries, and yogurt.

Place one crepe on a plate.

Spoon some yogurt down the middle.

Add a handful of strawberries.

Fold the right side of the crepe over the filling, then the whole thing over the left edge of the crepe.

Repeat, and garnish with strawberry pieces and brown sugar.

Enjoy!

  1. these crepes looks sooo good! there should be an advisory on the homepage: “Caution, this site may cause stomach to grumble uncontrollably.” Naked Baker, i hear you make awesome peanut butter cookies too. Alas, I have not had the pleasure…

    • Freddy! I’ll bring you some Monday if I have time! I can’t believe it’s the end of the semester already… not that I’m complaining.

      • how’d you know it was me?? don’t worry about the cookies, you should focus on studying young lady. maybe i’ll strip down and bake some myself!
