Bananas and Bikinis

It’s that time of year… we all break out our bikinis for the first warm day of summer and suddenly realized where we’ve been putting all those cupcakes and donuts and cheese and cookies and custards and pies and bacon.  Well, I had the initial freak out and was inspired to start Project Bikini Bod.  I’ll be doing my best to create tasty and healthy treats, conducive with getting the bikini bod you want this year.  The first recipe of the series is a little impromptu breakfast from this morning: Roasted Bananas with Yogurt and Pecans.  All three of these ingredients are a super healthy way to start your day, and trust me that this really fills you up and the caramelized bananas make it taste like a treat!

What you need (for 2, since your man or roommate or whoever you have breakfast with needs to look good on the beach as well!)

2 ripe bananas

1 cup fat-free yogurt

1 cup coarsely chopped pecans

1 tsp cinnamon

Preheat your oven to 400 and place the bananas on a cookie sheet, baking dish, or in a large pan.  Basically anything that can go in the oven.

Roast them in the oven for about 15 minutes.

While they’re cooking, chop up you pecans.

Place 1/2 cup of yogurt in 2 bowls.  Stir 1/4 tsp cinnamon and about 2 Tbsp of nuts into each.

The ‘nanners will be dark and oozing when they’re ready. Nom.

Peel each banana and cut into bite sized pieces.

Throw the banana chunks on top of the yogurt and sprinkle on the remaining chopped pecans.
